Caramelized Yucca or Cassava Cake
Brazilian Yucca or Cassava Cake, known in Portuguese as Bolo de Macaxeira, Mandioca or Aipim (the name varies depending on each part o Brazil you are), it is smooth and dense in texture, it has the right amount of sweetness. Cassava cake uses the root of cassava combined with coconut milk and dry coconut in order to create a sweet and uniquely flavour, It looks like a dense and firm pudding. It is a gluten and dairy free recipe. It's health and delicious ;-) perfect with a mug of coffee!
Ingredients: yucca roots, eggs, baking soda, coconut milk, sugar, coconut oil, dry coconut.
